Red Velvet Chocolate Chip Cookie Sandwiches

For me, Valentine’s day gives us an excuse to spoil our loved ones (and indulge ourselves) with all things chocolate and sugar. In other words, this holiday makes it totally acceptable to go overboard. These red velvet chocolate chip cookie sandwiches do the job perfectly. Chewy chocolatey cookies held together with a tangy cream cheese frosting. So good and so decadent.

Red Velvet Chocolate Chip Cookie Sandwiches

1 box red velvet cake mix

2 eggs

1/2 cup vegetable oil

pinch of salt

3/4 cup semi-sweet chocolate chips

1 8-oz. package cream cheese (softened)

1/2 stick butter (softened)

2 cups powdered sugar

1 tablespoon vanilla extract

I start by mixing the eggs with the oil, then I add the red velvet cake mix in batches. To avoid tough cookies, I was careful not to overmix my batter. As the ingredients combine, I throw in the salt and chocolate chips.

Something about that deep red batter looks so provocative.

I roll the cookie dough into balls slightly larger than golf balls and bake them off at 350 degrees for 10 minutes.

Patience is not a virtue that I possess. This is the worst part…waiting for the cookies to cool before filling them with yummy cream cheese frosting.

There is nothing wrong with taste testing before finishing the final product, right? 😉

Time to whip up the cream cheese frosting. Mix together the softened butter and cream cheese with the powdered sugar and vanilla extract. This stuff is rich and creamy.

Once the cookies have finally cooled, it’s time to scoop up the cream cheese frosting and construct the cookie sandwiches.

Devin and I loved these red velvet chocolate chip cookie sandwiches. All we needed was a glass of cold milk to go with these treats.
